Our Siberian pine nuts grow naturally in the Siberian Taiga. No treatment is carried out thanks to the cold and dry environment (25°/-35°). The harvest takes place in the months of October and November , months in which the farmers manually collect the pine cones inside the forest.

The Pinus Sibirica is a widespread species in central-southern Siberia and in the extreme east of Russia . They are rather small and roundish pine nuts, but they are considered among Siberians as a high-ranking and healthy food.

History

Symbol of death and resurrection, the pine was considered a tree with divine references. Starting from its pine cones, with a shape that refers to the egg, associated with birth and fertility, the tree was celebrated by the populations of the Mediterranean, including the Etruscans, Greeks, Celts and Romans. Also famous in ancient Rome was the ritual of the Arbor Intrat festival, in which the consecration of the pine tree took place, retracing the myth of Atys. It is said that a young inhabitant of Phrygia called Atys was so beautiful that he conquered the goddess Cybele herself, becoming her passionate lover. The King of Pessinunte (the ancient kingdom of Midas), convinced that the boy had been subjugated, decided to separate him from the goddess by offering him his daughter in marriage, thus angering Cybele who manifested herself during the wedding by playing a flute of Pan ( the traditional ritual instrument also of the Etruscans, called aulos). The sound of the flute drove all the guests crazy, including Atys himself who mortally mutilated himself with a knife. Zeus, moved with pity for the story, wanted to transform him into an evergreen pine tree, thus giving him eternity. Some people have reported what has been called Pine Mouth Syndrome: the development of a strong bitter sensation in the mouth 24-48 hours after ingesting certain species of pine nuts, a sensation which in some cases lasted up to two weeks. The cause was found in a variety of Chinese pine nuts from the Pinus armandii tree that China is isolating, so as to avoid similar problems in the future. After appropriate analyses, the scholars stated that, although the effect of this type of pine nut may be unpleasant, the reaction has no significant effects on human health.

You can store natural Siberian pine nuts in cool, dry places, away from sources of heat and humidity. Here are 4 useful tips:

  • The ideal condition for maintaining natural Siberian pine nuts is in a refrigerated environment . Natural pine nuts can also be stored without problems at room temperature during the winter season given the low temperatures. During the summer, on the other hand, it is advisable to keep it in the fridge or in the coolest possible places, as the increase in temperatures could favor the deterioration of the products.
  • The ideal container in which to store natural Siberian pine nuts is glass . In fact, thanks to its constitution it is impenetrable to chemical and gaseous agents, and having excellent thermal insulating capacity it maintains the initial temperature for a longer time compared to other materials. If the glass is colored, all the better: using colored glass prevents the entry of some wavelengths of light (including ultraviolet light) and therefore some nutritional and organoleptic characteristics remain unaltered.
  • The type of closure of the container is also important: an airtight cap ensures that the food is protected from excessive contact with oxygen which can lead to lipid oxidation and which can be essential for aerobic bacteria.
  • The environment should always be well ventilated : by ventilating the rooms, the internal humidity that escapes from the window is kept under control, guaranteeing the right balance, which helps to discourage the onset of moulds.
